Roasted Red Peppers

Roasted Red Peppers

Roasted Red Peppers make most things taste better.  It is worth the extra money to buy peppers that have a thick wall, as the cheaper thinner ones will not yield as much of the roasted meaty pepper. I throw ours directly on the low flame of our gas stove as they come out of the grocery bag. Every 3-4 minutes they are turned with tongs until they are perfectly charred, and then are tossed into a paper bag to steam for 15 minutes.

After they have steamed, their charred skin comes right off when you scrape it with a chef’s knife.  Some recipes will tell you to rinse the skin away under cold running water.  We prefer not to do this as it just washes away all the lovely juices and flavor you have developed in the charring. These peppers can be frozen whole, sliced, or chopped. They may also be pureed into Romesco, Harissa or pasta sauces.  They work on any antipasti platter and will liven up a seafood or green salad. Enjoy!
